My tasting notes for the wines follow.

Carmel, Merlot, Private Collection, 2007: Aged partly in stainless steel and partly in barriques, medium- to full-bodied, with gently mouth-coating tannins and notes of spicy cedar wood. On the nose and palate wild berry, cherry and currant fruits, those supported nicely by hints of licorice and chocolate. Drink now-2010. NIS 58. Score 87. K (Tasted 8 Oct 2008)

Carmel, Cabernet Sauvignon, Private Collection, 2007: Made entirely from Cabernet Sauvignon grapes, developed partly in stainless steel and partly in French and American oak barriques for eight months. Full-bodied, with somewhat gripping tannins, opens with a blueberry nose and then goes on to reveal currant and plum fruits on a lightly spicy background with a hint of espresso coffee that makes itself felt. Drink now-2010. NIS 62. Score 86. K (Tasted 8 Oct 2008)

Carmel, Shiraz, Private Collection, 2007: As with other red wines in the 2007 Private Collection series, developed partly in stainless steel and partly in barriques for 8 months. Dark garnet, medium- to full-bodied with chunky, somewhat country-style tannins, appealing cedar wood overtones and opening in the glass to reveal blackberry, plum and leathery notes. Not complex but sits comfortably with food. Drink now-2010. NIS 55.
